Northern Italian Cooking

The class is designed to cover some of the key savoury dish types from the North. We’ll prepare, cook and taste some of the dishes, with the idea of sitting down for the last half hour to enjoy a main course and dessert as we continue to talk Italian cooking.

We’ll prepare an antipasti dish such as Pork & Veal stuffed baby Courgettes

Polenta

This is Ricky’s solution to getting to grips and actually enjoying Polenta! Twice cooked and flavoured with goats cheese, butter and thyme.

Pesto

Making it from scratch

Risotto

We’ll put two pans on the stove and produce the classic Milanese and a simple but tasty Risotto Bianco

Radicchio

We’ll prepare Radicchio 3 ways including adding some to a risotto, prepare it grilled as a vegetable and in a salad.

Veal Milanese

Well learn the art of paniere and prepare this breaded veal dish

Gnocchi

A chance to roll out and shape gnocchi
