This is the sister class to the Ultimate 5 Pasta Sauces class.  Whereas the emphasis in that class is on the sauces and a pasta to match, here the class will look at more composite dishes where the relationship between the pasta and other components is the making of a fine dish.

We’ll start our day with a breakfast bite-to-eat - something Italian. Then we’ll set about making 5 great dishes. Here’s the pasta lover’s dream line-up:

Seafood Cannelloni using fresh market seafood we’ll put flavour and presentation at the heart of this dish

Lasagne.  Making both a traditional rich ragu and our own spinach pasta

Butternut Squash & Sage Ravioli.  Again we’ll roll out our own pasta and finish this classy dish with a cream based broth

Tuscan Pasta Soup.  Preparing a hearty soup of vegetables, meats and pasta

Ultimate Pasta Bake.  Rabbit, Leek and Bacon bound in a top notch velouté, oven baked and gratinated.  Pure comfort food.
